So, I'm trying to touch some roots here and play more with Italian food.
<br />I was looking for something a bit different but a taste people would know and remember. This would be very similar to a balsamic reduction as well. Vino Cotto meaning cooked wine. Red Wine reduced down, with mulling spices.
