The mysterious tea eggs

Some Chinese believe that the practice of cooking tea eggs may be harmful. I am not certain if this is 100% true but some professionals have said it will produce harmful nitrates from acid reacting with iron from the eggs because it is cooked for a long period of time. Because of this, the eggs may NOT be easily digested, and MIGHT cause cancer. <br />Umm… It won’t scare me away, as I do not eat it every day, plus there is more delicious food in the world I need to try.
