Thai-inspired asparagus salad with fried meyer lemon

A few weeks ago my partner and I tasted fried lemon slices for the first time at The Tar Pit in Los Angeles. The frying really mellowed the acidity of the lemon and it was quite tasty. This recipe utilizes the type of dressing you would find on a Thai beef salad, with fresh herbs and lime juice. The fried lemon slice is meant to be eaten, rind and all, along with the salad.
