This past summer, I discovered the joy of using tarragon as the main flavor for dishes rather than bundling it with other herbs. My tarragon renaissance led to a tarragon simple syrup, which naturally led to the question, what to do with it? Adding a splash to a gin & tonic was an obvious choice.
