This is one that I make all summer long. If you can't find cherry bomb peppers, use another small pepper with a bite. You an also be creative with your herbs, cilantro works well, as does marjoram, but I can never pass up the chance to use basil, since it is the one herb that truly says Hello world! Summer is here! Don't wait until tomato season to make this dish, it is fabulous without them. Be sure to follow the timing to ensure a good, crisp finished dish.
