When strawberries start popping up at our local berry stand, it's always cause for celebration in our house! We tend to gobble them up quickly, but I do like to set some aside for other delicious options, such as this Strawberry Vinaigrette. Strawberries, white wine vinegar and honey get a quick whiz in the food processor and yield a bright, fruity, rosy pink dressing. I like to drizzle some over fresh mozzarella and baby spinach as a riff on caprese salad for a delightful lunch.
