Spinach-chicken-feta thin crust pizza + variations

My nickname for this is 'Dollar Tree Pizza' because nearly all the ingredients can be found at your local Dollar Tree! I discovered thin crust pizza crusts there one day, found the feta, canned chicken, mushrooms in a glass jar as well as minced garlic, dried oregano, and the cheddar cheese too! The spinach is chopped, and can be found in the freezer section--only the two fresh vegies have to be purchased elsewhere. I tell my friends that the Dollar Tree is not just a junk food type of store, but one where, with a little imagination, you can find healthy foods to fix at home. The crust here is thin and holds up well with the creamy garlic sauce. I include two versions of the pizzas here--and both can be made easily--the whole process from making the sauce to bringing the pizzas out of the oven takes less than one hour! Serve with a fresh vegie salad with oil/vinegar herb dressing.
