Maple roasted pears are incorporated into a spiced ice cream base, then churned to form a creamy ice cream. This is then sandwiched generously between two pillow-soft ginger molasses cookies. Wrap them in cling wrap and put in the freezer, and then serve them at your next holiday potluck!
