slow cooked lamb stew

This is a very easy mid- week dinner or great for a potluck. The key is to cook it at a low temperature for a long time in a dutch oven or slow cooker. My grocer gets fresh lamb every Tuesday and I buy a rolled shoulder which is about $12 for 4 lbs. I take it apart remove excess fat and cube. I use canned tomatoes because fresh ripe ones do not exsist here in winter and it's quicker, but use fresh if you can find them. Serve with a white Italian loaf and a hearty red wine.
