As a kid, I remember my folks roasting and canning bushels of peppers in late summer and early fall..sweet ones, hot ones...peppers mixed with other vegetables. As a result there was always a form of a pepper salad on the table at all family events. Now I don't can ,but I do keep the tradition of a pepper dish on the table at family dinners and usually always have them sitting in the fridge. This simple salad is one of our favorites. I like it a little spicy and add some hot pepper to it...but you can totally skip the spice and still get good flavor. - inpatskitchen
