This is a variation on the typical roast chicken with lemon and thyme. My four kids love it -- they practically tear the chicken apart with their hands when I set it down on the table. I usually roast two at time -- one for that evening and one for leftovers in the fridge. Sometimes I use thyme in place of the rosemary if that is what I have on hand. The pan juices are nice and sweet and make a quick sauce with the addition of a little flour and butter. Serve with roasted sweet potatoes, green salad and crusty bread for an easy supper.
