This early autumn squash gets roasted and shredded to make the perfect base for a Spanish inspired wine and tomato sauce with meat (veggie in this recipe) and spices. Topped off with shreds of Parmesan cheese and crunchy, fried sage. It's familiar yet so new. Meat aside, it tastes VERY meaty and hearty.
