This is one of the three versions I made of my super easy <a href="https://food52.com/blog/22742-how-to-make-roasted-fruit-tart-easy-summer-dessert">Roasted Fruit Tart</a>, but you can really use any fruit and any kind of cookie to make a tart like this! The way the roasting concentrates the flavors of the pineapple and mango is amazing. It makes a super flavorful (and did I mention insanely easy) tart!
