The inspiration for this recipe came from a delicious sharp cheddar & sherry-glazed onion grilled cheese sandwich and Carey Nershi's beautiful roasted apple butter posted last week here on Food52. I love how roasting the apples intensifies the apple-flavor and have adopted that method here. If you are feeling fancy, a garnish of deeply caramelized shallots, finely diced apples, or some homemade sourdough croutons would be lovely with this soup.
