Ever since reading about quinces in Jane Grigson's book "Good Food", when I was 16, I have been fascinated with them. It is only in the past 15 years that I have found quinces to work with and I have tried all kinds of recipes. This one is based on a tart recipe from "Bread and Chocolate" by Fran Gage.
