Bake this potato gateau in the morning and keep it aside until dinner time. While you set the table, reheat it so that the cheese filling melts again and the butter mashed into the potatoes makes it smooth and rich. You can choose your favorite combination of cheese and charcuterie for the filling: smoked ham and <em>scamorza</em> (an Italian cow's milk cheese) work well together, as do cooked ham and mozzarella, or gorgonzola and <em>stracchino</em> (another type of Italian cheese) for a vegetarian version. The quantities are enough to feed four very hungry people, or six people that are also being served a soup or hearty side dish.
