I was informed in the comments that this recipe is very similar to one found on the Simply Recipes website, so I must give credit to the site. I received something similar to this recipe from a family member, and I loved it, so put my own twist on it, and now make it regularly for dinner parties etc. When you are interested in cooking, you are constantly collecting recipes from so many sources and marrying them up into something to your liking. I used this chicken as an appetizer the other night. I love Ponzu sauce, which is a sort of citrus lime soy sauce, I see it in the grocery stores in the United States, but not so much here in Canada. You might be surprised to see dark rum as part of the marinade, fear not, you will hardly notice it, but it gives the chicken a unique flavor. Be brave and try something different, your guests will taste a little something special but won't be able to put their finger on it.
