Pimento cheese stuffed celery

Shred 1/2 pound of American cheese. Blend one small jar of pimentos with their liquid to a puree stage. Add: 1/4 cup mayonaise, 1/4 cup sweet or dill pickle relish and the pureed pimentos to the shredded cheese and mix well. <br /> <br />Cut across 4 stalks of celery making 4 even pieces and fill the center of the celery with the pimento cheese mixture. Chill until serving time and serve cold. <br /> <br /> <br />My family loves this dish to accompany any meal in place of a salad or as a party or picnic food. It goes great with a bowl of chili or soup instead of a sandwich. We like the dill pickle relish in this as it give a unique flavor without the sweetness. <br /> <br />
