Every Christmas I am tempted by all of the peppermint chocolate biscotti I see--but many of the recipes, while gorgeous, are frequently either quite time intensive and/or not good storage cookies. I wanted something a little more basic. I remember Alice Medrich's FANTASTIC chocolate biscotti recipe and wondered if it would adapt well to peppermint. Turns out the answer is a resounding yes. <br />If you cannot find the Andes peppermint baking chips (WalMart carries them during the holidays), try chocolate chips and add 1 teaspoon of peppermint extract to the dough. <br />
