This recipe is the pure embodiment of summer. There is nothing that I crave more than a fresh, homemade tomato sauce with pasta, basil, and some Parmigiano cheese. <br /> <br />In this recipe, the skin and seeds of fresh tomatoes get discarded, but the flesh and the "tomato water" get saved and turned into a delicate, lightly cooked sauce.
