This is a modified version of a chicken salad sandwich recipe I grew up eating in the summer in the Cape Cod area where I'm from. There are a lot of steps to it, especially for a salad, but the end result is worth it. The apples are cooked which adds a nice tang and the addition of maple syrup to the salad dressing adds just the right amount of sweetness. If you can find Cains brand mayonnaise, another New England favorite, I would highly recommend it. - Abduffy
