This is an adaptation of Mark Bittman's Chicken Tortilla Soup. Although the original is great for spring & light eating, I added a few more ingredients (beans, hominy & spices) to make it heartier and more like a meal for the fall and winter. The original adaptation is from Rose Garden restaurant in Anthony, TX. This recipe is pretty forgiving and ingredients can be added or taken away as desired.. except for the chipotle chiles! I personally think that they tie this whole recipe together.
