Meatloaf is one of those things you can have fun with and add anything to. This is one of those recipes. It has great flavor from the mushrooms which are sautéed until golden brown, to the addition of the sharp cheddar. <br />My kids are not meatloaf fans, and any chance Id rather not make a separate meal. I hit upon the idea of forming to small "hamburger" patties to cook alongside the meatloaf. They soak up some of the yummy juices from the meatloaf cooking alongside it. My kids gave me a look of, "where is the bun?" and I could tell they were not happy initially. But, they sure ate all the mock meatloaf!
