Lemon summer squash olive oil cake

Summer squash cakes and breads usually use fall-inspired spices, which can be a little out of place when you get that summertime bounty (or endless, unbidden supply) of yellow squash and zucchini. Bright lemon makes the cake more July than October. Cornmeal, vanilla and black pepper are used to add warmth instead of cinnamon, clove and nutmeg.
