Take any size beef roast...cut slits into the meat...stuff with garlic cloves n lemon rind..drizzle meat with EVOO or any oil...bake in pre-heated oven @ 400 degrees ...until beef is seared the darkness that suits your eye..45mins -1hr....turn off oven n let the heat cool down..take out meat..let rest 30-45 mins...cut against the grain in slivers. Keeps in frig for cutting off meat 4 sandwich, stir-fry..whatever.
