Lagosta Suada in a traditional dish from Peniche, a city on the Atlantic coast of Portugal where good lobsters are abundant. It is cooked in wine and tomato sauce. I thought this would be a nice way of cooking Maine Lobster, which is so popular in the U.S. One day I cooked this lobster recipe for a birthday party but forgot to buy the white wine so I used Champagne instead and everyone liked it so much that I now always use this version with Champagne but a good Sauternes from California is as good..
