I'm the kind of person who is rarely satisfied with just one serving and this dish allows you to eat as much as you want without feeling like you never want to move again, not to mention it's just plain delicious. I like to make my own coconut milk and add the left over bits of coconut to my 'rice' to avoid throwing it away. If you're put off by cauliflower rice, just make regular rice instead. I adapted the tofu recipe from Rivka's Hoisin-Lacquered Tofu.
