There are countless versions of soy-based marinades out there. Wanting one that’s bright, summery, and assertive enough to flavor the steak quickly, I started with a basic version and added lime juice and zest, grated ginger, and a big handful of fresh mint. Next, I wanted a vibrant fruit salsa to accompany the steak that would echo the flavors of my marinade. A mango or tomato salsa instantly came to mind, but with lime, ginger, and mint, peaches seemed the perfect fit. I turned to a recipe for Vietnamese peach salsa from Alice Waters for inspiration. I couldn’t resist some tweaking: I omitted the raw garlic, subbed mint for cilantro and basil, added grated ginger, and dialed back the fish sauce so it wouldn’t overwhelm the steak. The result: an easy, delicious twist on soy-marinated steak, just in time for peach season. - EmilyC
