Green peach & blue cheese toast
This open-faced sandwich was inspired by two other recipes: Bill Smith's <a href="https://food52.com/recipes/13549-crook-s-corner-s-green-peach-salad">green peach salad<a/> and Gabrielle Hamilton's <a href="https://cooking.nytimes.com/recipes/1018356-celery-toasts">blue cheese toasts<a/>. Mash them together and you get your new favorite warm-weather lunch.
