Good cookies (oatmeal cookies with honey)

This recipe comes from my late mother-in-law. The name of the recipe doesn't come from hubris -- but from the way kids described them (as in, "Can you make me the good cookies?"). The cookies seem modest and unassuming, but the oats and honey combo is what makes them special -- in terms of texture and taste. <br />Given the number of oatmeal cookie recipes entered in the current contest, and the version from Jenny in Jenny's in the Kitchen, it's beginning to feel a bit like an oatmeal cookie throwdown. But, hey, the more the merrier -- since we could all use a good oatmeal cookie (of whatever type) -- or two -- or six.... <br />I hope you'll enjoy these. <br />Please note the note at the bottom of the recipe. I've listed all the ingredients per my mother-in-law's version, and the variation I generally use in the note. My husband is anti-nut and chocolate-obsessive, and the variation accomodates anti-nut, chocolate-obsessiveness.
