Farmer's pie

We love lentils, and we love the idea of shepherd's pie (anything with mashed potatoes on top can't be a bad idea). We wanted to create a hearty, filling veggie dish that would be perfect for cold winter days but welcome any time of the year, so we decided to combine earthy lentils and savory mushrooms with sweet caramelized onions and top the whole thing off with browned mashed potatoes. - Foxes
