I made these wraps for lunch in self defense. Nearly every day someone in my office orders pizza or fast food, or brings in cake or cookies leftover from the weekend. I find it easiest to avoid those choices if I bring lunch from home. I started making these wraps, and liked them so much that I brought them to the office every day. Clearly the recipe is endlessly adaptable, but if you try it, do add the citrus zest at the end before you wrap it up; that makes all the difference.
