Egg tartines with romesco and greens

Romesco is a classic match to patatas bravas, a Spanish bar-food snack. The way the mild heat of the peppers combines with the tart sherry vinegar to cut through the fattiness of the almonds is a prime example of balance. Although grilled bread is traditionally used in romesco, you can leave it out. Adjust the recipe by skipping step 1 and adding an extra ¼ cup of almonds.
