This is an almost-apology to all the meats out there: I'm sorry but not sorry. This pie just doesn't need you. <br /> <br />Growing up, my mother prepared a dinner every single night for me, my two older siblings and my father. Every single evening, we gathered at the table and had dinner like an actual family. (My husband and I sit on the couch and scoff down dinner while watching recorded series of whatever- and that's maybe 3 times a week as we work different schedules from week to week.) Let's be real- do people still gather at a table and eat homemade dinner every evening, anymore? Maybe sometimes. Anyway, pot pie has always been a favorite. Mother loved to use leftover pot roast meat in our family pot pie nights. But then I grew up and stopped eating meat. So this is an ode to my mother- thanks for the memories. This pie really brought my husband and I to the dinner table- for once.
