  This is how a a big, warm blanket of comfort tastes like. A spoonful of slowly roasted meat that is falling apart, covered with intensely flavored sauce -- slightly sweet, slightly acidic, but not quite so. This is my go-to dish when I want to make people's hearts and tummies sing with happiness. It is also one of the most popular dishes at my dinner parties. It takes three or four days to make, but the best part is -- it's the brine and the oven that do all the work, and you can literally go shopping.
