Roasting garlic in the oven with a drizzle of olive oil transforms it into something mellow and rich. Great just spread on toasted bread, but even better when combined with lemon zest in this aioli and used as a special dip for the roasted Brussels sprouts. PS: the stray sprout leaves are so good, so make sure they find a spot on your baking sheet.
