Courgette, feta and mint salad

This is a fabulous summer recipe and perfect to do when you have a glut of courgettes in the garden (although I am more than happy to buy courgettes to make this). The slight charring can be achieved on the barbecue or griddle pan, whichever works for you. It is this cooking process that seems to transform the flavour of the courgettes into something delicious that my children will happily eat whilst a steamed disc of the same would fill them with dread. The combination of the salty feta, fresh mint and zesty lemony dressing completes the picture.
