I recently saw a mostachon recipe on TV and was completely hooked. A chewy meringue cake with a delicious cream cheese frosting? I couldn't run to the kitchen fast enough! Although it is common to garnish the cake with fresh fruits (especially strawberries), I decided to adapt this recipe (http://www.foodnetwork.com/recipes/marcela-valladolid/strawberry-meringue-cake-mostachon-recipe.html) and turn it into a coffee toffee mostachon. <br />I made several changes to the recipe keeping the coffee theme in mind. I thought toffee would go well with coffee (besides it is so fun to say coffee toffee mostachon!!), and pair well with both the almonds and the hint of orange zest. I love Biscoff and coffee together, so I absolutely had to include those. I have also made this cake with graham crackers and I have to say that I loved the taste of the Biscoff cookies quite a bit more! Enjoy!
