Chocolate, chile and cinnamon ice cream sandwiches

This is a flavor combination that I love - both in savory and sweet dishes. When I thought about chocolate chile ganache, as in a truffle, I thought how nice it would be to have something cold and creamy to counteract the heat. Rich chocolate, spicy cinnamon and sweet cream tease your taste buds then the chile hits the back of your mouth and lingers near your throat. I adapted the ice cream base recipe from Jeni's Splendid Ice Creams for the cinnamon ice cream - no eggs makes for clean, intense, cinnamon flavor, lovely on its own or served with fudgy brownies, or smushed in this delicious ice cream sandwich.
