I saw this in a magazine some time ago, but can't remember where... It is fresh, summery, simply delicious. It is so easy to make! It's great with meat--like roasted pork loin--or served nested on a lettuce leaf, like a salad. Even my husband, who's a meat & potato guy loves it.
