There is something about flambe-ing a dish... Intentionally having fire in your kitchen makes the cooking just that much more exciting. So when I can... I like to add it in. <br /> <br />Combine fire with the image of a glass of brandy by the fireplace on a snowy late winter's evening. You'd definitely want something to nosh on - something with a touch a sweetness and a touch of acidity to balance it out. I went more to the savory side of a tart with my dish, but the warmth of the brandy and the sweetness of the onions would fit nicely into any cocktail party or as a side for a steak dinner.
