Black-eyed peas with spinach and dill

In the South, it is thought that eating black-eyed peas on New Year’s Day brings good luck and prosperity. If you continue to eat them throughout the year, they may even bring good health (they are a good source of antioxidants and folic acid). Also, with their black circular eyes, they are so aesthetically enchanting. This recipe is from Pakistan and is adapted from a Madhur Jaffrey (we love her) dish.
