One of the cheapest dinner hacks you can make yourself has got to be pizza. Sure, plain old mozzarella and sauce would make a great pizza feast, but if you've got some bits and bobs of cheese laying around, an onion and a beet or two, be prepared for a round of applause from your dinner guests. <br /> <br />I’m the only one in the house who likes beets, so I don’t make them all that much. If I hit upon a beautiful bunch of beets at the farmers market, with the greens still intact, I find myself wrought with a little excitement. This beet pizza turned out really delicious, with a crisp crust, lots of different flavors and textures – salty, sweet, crunchy, soft, and chewy. I kept about 2" of the tops on my beets when roasting, and included some of these tender pieces on the pizza. <br /> <br />The pizza dough recipe is adapted from The Silver Spoon, one of my favorite cookbooks. <br /> <br />The topping quantities listed are for one pie only. Double the topping ingredients if you decide to make two Beet Pizzas.
