Basil goat cheese toast with fresh peaches
Toast is my go-to afternoon snack, and sometimes it needs a little sprucing up. The simple 'herbed goat cheese + some vegetable/fruit' is probably my favorite formula; it can go so many directions, and takes advantage of what's ripening in the garden or on my counter. I used the basil goat cheese I'd been eating off all week (with tomatoes), and added a little honey to welcome in the fresh peaches. Really, goat cheese toast is a vessel for pretty much any lovely combination your kitchen offers.
