My Korean mother taught me how to make Kimchi, a traditional Korean staple. Kimchi is typically made with Napa cabbage, red pepper flakes and lots of ginger and garlic, then fermented. The fermenting process makes kimchi obtain probiotic properties, which are good for you. <br /> <br />I had been trying to make kimchi pizza for a while, and thought some kind of meat would be a good accompaniment. After enjoying bacon for breakfast, I stir fried kimchi with bacon fat rendered from the 3 pieces of bacon. This is just enough fat to give the flavor a large boost. Combined with the sauce, every bite has a deep, rich flavor that is to die for. This is one delicious pizza that will be added to my regular routine. The pizza tastes even better the next day.
