This recipe combines ingredients that complement each other - orange zest brings out the aromatics in the vanilla, almond extract coaxes the natural sweetness from the almonds, and cranberries provide the surprise tart balance. Using olive oil and eggs results in a biscotti crust that is crisp but not hard, and a cookie interior that is tender and light. They travel well to family reunions, office drawers, and into a hot cup of tea.
