  Squash is an unexpectedly delicious match for frangipane. Its relatively mild texture and flavor emphasizes the lush sweetness of the hazelnut frangipane. I use acorn squash here because I couldn't resist its adorable scalloped edges and small size, perfect for miniature galettes, but any squash will do. Vanilla crème fraîche is wonderful on top, and a dollop in the galette crust makes the dough a dream to work with.
