Eggs in purgatory
Eggs in purgatory--or eggs simmered in tomato sauce--is a classic Italian recipe make from pantry staples--plum tomatoes, garlic herbs, and eggs. Sprinkling with pepper flakes adds heat. Serve the eggs over toasted bread rubbed with garlic. Great for breakfast, lunch, dinner, or a midnight snack.
