Bean brownies, really? If you’ve already clicked on this post and read it, I am guessing are intrigued, am I right? If you give these a try, you’ll be shocked at how good they taste. I know, black beans and avocados don’t seem like they’d work in a brownie and eating them with chocolate seems like pure insanity, but trust me, it works. No one will believe that these are actually healthy because you really can’t tell. Now I’ll be completely straight with you and say that the avocado has to be right. And what I mean by that is that you can’t use under ripe or overripe ones or the taste does come through. Trust me, I’m actually really grossed out by the taste of cooked avocado. So you know how some things are better cooked and some things are better raw? For example, I like a good banana bread but for the most part bananas just need to be fresh and raw. Whereas, you would never bite into a potato without cooking it. For me, avocados should basically never be cooked, this recipe being a rare exception. Even still though, if you’re worried about the flavor then simply replace the avo in the recipe with additional nut butter. My sister gave me this idea and I made them specifically for her when she was expecting my nephew. She loved them and so did a lot of my other family members. Prep Time 10 minutes Cook Time 40 minutes Total Time 50 minutes Servings 8 brownies Ingredients 1/2 small ripe avocado (about 1/4 cup) 1/4 unsweetened nut butter (such as almond butter, cashew butter, etc.) 1 15 ounce cooked black beans, rinsed 1/2 cup coconut palm sugar or raw sugar 1/4 cup pure maple syrup 1/2 cup cacao powder or cocoa powder 2 teaspoons vanilla extract 1/2 teaspoon baking soda 1/2 teaspoon salt 100 g about 1/2 cup dairy free semi-sweet dark chocolate chips or chopped chocolate Instructions Preheat oven to 350 degrees F. Combine all ingredients except chocolate chunks in food processor or blender and blend until smooth. Grease a 8x8 in glass pan and use a rubber spatula to scrape batter into pan. Top with chocolate chunks and press into top Bake for 35- 45 minutes until toothpick inserted in center comes out clean. Cool completely before cutting (if you are as impatient as I am than you can skip this step but they will be very soft.) Recipe Notes If you're afraid of adding the avocado to the brownies it's alright to replace the 1/4 cup of avocado with 1/4 extra nut butter. Related
