Roasted vegetables are a versatile side dish that you can chop and change to your preference. What I love about roasted vegetables is that you can eat them as they are, add them to a salad, or serve them as a side. In this case I used pumpkin, red peppers & onions and served them on couscous with a sweet & sour sauce.
